Rhubarb Cake

 

1 ½      Cup brown or white sugar

½         Cup shortening

1          Egg

                        Mix well and add:

1 tsp. soda dissolved in 1 Cup of buttermilk or sour milk

2          Cup flour

1 tsp.    vanilla

 

Mix as usual, add 2 Cup fresh or frozen rhubarb.  Put in a 9 X 13” cake pan.

 

                        Topping:

½         Cup brown or white sugar

1 tsp.            cinnamon

 

Mix and sprinkle over top before baking.  Bake at 350º for 30 minutes.
