Pumpkin Muffins
1 ¾ cup Flour
⅓ cup Sugar
2½ tsp. Baking Powder
¾ tsp. Salt
½ tsp. Cinnamon
½ tsp. Nutmeg
1 beaten Egg
½ cup Pumpkin
¾ cup Milk
⅓ cup Cooking Oil
½ cup Raisins
In a
large mixing bowl, stir together the first 6 ingredients. Make a well in the center. Combine the next 4 ingredients, and add them
all at once to the flour mixture. Stir
just until moistened. Stir in raisins,
if desired. Grease muffin cups or line
with paper bake cups; fill ⅔ full.
Bake in a 400° oven for 20-25 minutes or till golden. Remove from pans; serve warm. Makes 10-12 muffins.
