Pumpkin Cake
2 cup Flour
2 cup Sugar
4 Eggs
1 cup Cooking Oil
1 tsp. Cinnamon
1 tsp Soda
2 cup Pumpkin
½ tsp Salt
Beat
eggs until creamy; add sugar and oil and blend well. Combine flour, spices, soda and salt and add to mixture. (Pumpkin pie spice can be substituted for
cinnamon.) Add pumpkin last. Bake in prepared 10-inch tube pan at 350 º
for 60 minutes. (Using a 3 quart oblong
Pyrex baking dish, 325 º
50 – 55 minutes)
